Curried Carrot Spread
Ingredients:
1 cup sliced carrots
1/4 cup onion
1 clove garlic
1 t curry powder
1/4 t ground cumin
1 T olive oil
1/2 cup Great Northern Beans
1/8 t salt
1/4 cup water
Directions:
Boil carrots until tender. Drain. Cook onion, garlic, curry powder and
cumin in oil until onion is tender. Add carrots, onion mixture, beans,
water and salt to blender or food processor. Blend until smooth. Serve
over crackers or chips.
