Claire's Lentil Soup

Lentil Soup


1 ½ cup lentils, dry
½ cup carrot, diced
½ cup celery, chopped
½ cup onion, diced
2 tablespoons parsley, minced
½ teaspoon salt
1/8 teaspoon pepper
8 cups water


Put everything into a soup pot.

Bring to a boil.

Reduce to a slow simmer.

Cover and cook for 1 hour.

Taste and adjust seasoning as needed.
